Chef Damien presents … the Odyssee’s homemade fish soup

Chef Damien Sullivan and his team’s homemade fish soup is quite a story!

First of all, you need to wake up at 5:00 am and find some lovely fresh produce: fresh catch of the day, vegetables from the market…
Clean the fish, remove the fillets, scrape off the scales from the small catch, clean and chop the vegetables, sear them and then simmer everything with the herbs. Strain and blend, then chill. Reheat over a low heat before serving in its tureen with garlic croutons, rouille and grated cheese.
